Harbour marina, yachts swaying beyond the glass, mountains standing guard across the inlet. It&#8217;s where the city goes when it wants to feel lucky to live here \u2014 and where visitors understand, over one dinner, why nobody leaves.<\/p>\n<h3><span class=\"ez-toc-section\" id=\"The_Concept\"><\/span>The Concept<span class=\"ez-toc-section-end\"><\/span><\/h3>\n<p>Cardero&#8217;s belongs to the Sequoia Company of Restaurants, a Vancouver group that specializes in rooms with unrepeatable settings. Here the brief is warmth over water: West Coast seafood cooked honestly \u2014 much of it in a wood-burning oven \u2014 served in a timber-lined room that glows like a boathouse at dusk, with a friendly Marine Pub alongside for less formal evenings.<\/p>\n<h3><span class=\"ez-toc-section\" id=\"What_to_Order\"><\/span>What to Order<span class=\"ez-toc-section-end\"><\/span><\/h3>\n<p>Begin with Thai chili prawns or whatever the fresh sheet is celebrating, but know that the cedar plank salmon is the house masterpiece \u2014 roasted on the plank until it tastes of smoke and ocean at once. The wood-fired oven also turns out blistered pizzas that regulars swear by, and Sunday evenings mean slow-roasted prime rib with Yorkshire pudding, carved generously.
