The salt-lined locker does the slow work \u2014 twenty-eight to forty-five days of dry-aging in air purified by the salt itself, temperature and humidity held to strict discipline.<\/p>\n<h3><span class=\"ez-toc-section\" id=\"What_to_Order\"><\/span>What to Order<span class=\"ez-toc-section-end\"><\/span><\/h3>\n<p>Begin with oysters or the tableside Caesar, prepared with old-school ceremony. Then the decision that defines the evening: a salt-aged cut with its deep, concentrated savour; a marbled slice of A5 wagyu; or, for the once-in-a-lifetime table, certified Kobe.
