On one side there is a rotating selection of single origins, changed as lots come and go, and these are what the slow bar is for: brewed by hand, one cup at a time, so that the differences between them actually register. That split is honest and it is the right one. Very few caf\u00e9s in Vancouver offer that geometry at all.<\/p>\n<p>For work, it is a solid choice \u2014 high ceilings absorb noise, the room is built for people who stay, and nothing about the service model pushes you out. It is not silent and it is not a library; expect the ambient volume of a busy specialty caf\u00e9 in a tourist district, which most people find easier to concentrate in than total quiet. Noise sits at a comfortable middle: conversation, the bar, the grinder. The crowd mixes downtown workers, Gastown residents and a steady flow of visitors, and the mood shifts noticeably between weekday morning and weekend afternoon.<\/p>\n<p>The building&#8217;s character is a real part of what you are paying attention to here.
