Black+Blue: A Temple to Beef in the Luxury District
Vancouver has steakhouses, and then it has Black+Blue — a three-storey monument to the art of beef, rising through downtown’s most polished shopping district. The signature isn’t hanging on the wall; it is the wall: an aging locker lined with pink Himalayan salt brick, where the house’s steaks spend weeks becoming something extraordinary.
The Concept
The Glowbal Restaurant Group conceived Black+Blue as its ode to the classic North American steakhouse, elevated by serious sourcing: certification to serve authentic Kobe beef, Japanese A5 wagyu on standing offer, Canadian Prime as the everyday backbone. The salt-lined locker does the slow work — twenty-eight to forty-five days of dry-aging in air purified by the salt itself, temperature and humidity held to strict discipline.
What to Order
Begin with oysters or the tableside Caesar, prepared with old-school ceremony. Then the decision that defines the evening: a salt-aged cut with its deep, concentrated savour; a marbled slice of A5 wagyu; or, for the once-in-a-lifetime table, certified Kobe. Lobster and seafood towers give the table balance, and the wine list — long, international, sommelier-tended — deserves unhurried reading.
The Space
Golden-age glamour executed without irony: chandeliers, leather, marble and murmur on the main floor; intimate private rooms above; and The Roof at the summit — Vancouver’s largest rooftop dining terrace, warmed by open fireplaces and sheltered by glass, equally suited to a summer aperitivo or a defiant January cocktail.
