The Concept
Restaurateur Seigo Nakamura brought Miku to Vancouver in 2008, importing aburi — flame-seared pressed sushi with near-century-old Japanese roots — and giving it a West Coast accent through original sauces and local seafood. The gamble reshaped the city’s Japanese dining scene and spawned a family of sister rooms, including Minami in Yaletown. The current waterfront home, occupied since 2013, carries a Michelin Guide recommendation, Ocean Wise sourcing and a Wine Spectator-recognized cellar.
What to Order
Trust the signatures: salmon oshi first, ebi oshi close behind, then the aburi sashimi selections that show what controlled flame does to premium fish.
